Thai Drunken Noodles
On my first attempt at cooking Thai food, I made it up as I went along, added and subtracted ingredients, and came out with a fan-freaking-tastic result!
So here’s my (super easy) recipe for Drunken Noodles, adapted from the Drunken Noodles recipe at epicurious.com:
Ingredients
1/4 packet of Taste of Thai rice noodles
1/4 cup extra virgin olive oil
6 garlic cloves, chopped
1/8 cup fish sauce
1/8 cup soy sauce
1/2 tablespoon sugar
1/2 onion, sliced
1 large red anaheim chile, chopped
a shake or two of crushed red pepper
1/4 cup fresh or dried basil leaves
Meat if you want it - I like it with beef, but you could also use chicken, tofu, or fish
For extra heat, add extra chiles, or even Thai chiles
Directions
Follow stir-fry directions for noodles.
While noodles are cooking, heat olive oil in a large pan. Add onions and garlic; cook over medium heat until tender. Add all remaining ingredients. Cook until noodles are al dente. Serve and enjoy!!!
