Slow Cooker Chile Verde
I’m always on board with anything I can make in my Crock Pot. It’s God’s gift to women (it’s just cleaning it that sucks, but with any luck we can make the men do that).
Along those lines, you simply must try this fabulous Chile Verde recipe. As Meredith pointed out, it’s not classic Chile Verde; so, like Meredith did, please don’t judge me. Just make and enjoy!
Makes 4 servings.
Ingredients
2 tablespoons olive oil
1 onion, chopped
2 cloves of garlic, minced
1 pound cubed pork
1 (16 ounce) can green salsa
1 can diced tomatoes
1 (12 ounce) can sliced jalepenos
Directions
Heat oil in skillet. Add onion and garlic. Cook until fragrant. Add pork and cook until brown. While onion, garlic, and pork are cooking, add salsa and tomatoes to slow cooker. Chop jalepenos. Put all ingredients to slow cooker. Cook on high 3 hours then reduce heat to low and cook for 4-5 more hours.
I like to serve it over rice with tortilla chips.
