Duck prosciutto wrapped scallops

The nice old couple at the market sold us a piece of duck prosciutto for 5$ (the husband was pissed about this) and this is the delicious thing we did with it:

Ingredients:

  • 4oz duck prosciutto 
  • 8 large sea scallops (cleaned)
  • 1 tbsp butter (clarified butter will work better)
  • 1 extra piece of duck fat from the meat (about 1 tbsp)
  • the leaves of 3 red beets
  • salt, pepper and grains of paradise
  • 8 4” wooden skewers

Heat a cast iron skillet in the oven to 400 degrees. Slice the prosciutto as thinly as possible.  Wrap each scallop in a piece of prosciutto and skewer to keep together.  Place the skillet on the stove on high heat.  Melt the butter and extra fat in the skillet.  Place each of the scallops in the skillet starting at the far end and working clockwise (so you know what order they were placed in and each of them get the same amount of cooking). Sear the scallops for 2 1/2 minutes per side.  Do not touch them except to flip.  Once the scallops are done move them to a rack to they can drip.  Place the beet leaves in the pan and turn repeatedly to coat in remaining fat.  Cook until wilted (about 5 minutes)  Place the scallops on top of the leaves on plates.  Sprinkle with a pinch of salt, pepper and grains of paradise (I just discovered these, they are tasty).   It looks like this:
