Reese’s Chewy Chocolate Cookies

I realize this is a dessert, not dinner. But dammit, you’re an adult, and if you want to have cookies for dinner you can have cookies for dinner! And trust me, these cookies are worth it. I did not create this recipe out of my own brilliance, it’s on the back of the bag for Reese’s pb chips. Don’t make any modification for high altitude, they’re actually better following the recipe in Boulder compared to IL.

  • 2 cups all purpose flour
  • 3/4 cup cocoa
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1-1/4 cups (2-1/2 sticks) butter or margarine, softened
  • 2 cups sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • 1-2/3 cups (10 oz package) Reese’s Peanut Butter chips

Heat oven to 350 degrees. Stir together flour, baking soda, and salt. Beat butter and sugar in large bowl with mixer until fluffy. Add eggs and vanilla; beat well. Gradually add flour mixture, beating well. Stir in peanut butter chips.

Drop by rounded teaspoons onto ungreased cookie sheet. Bake 8-9 minutes (You’ll think they aren’t done, but they are. If you keep them in longer they’ll get all crispy and gross). Cool slightly on pan (about a min), move to wire rack to cool completely. Makes 4-1/2 dozen cookies.
